Victory for Malaysia

A big clap and congratulations to our Malaysian Team for won the AFF Suzuki Cup 2010. We are the champion and we Malaysian always with our say "Malaysia Boleh"!!

Minnie Mouse Cake Again!

My lil angel or better known as princess is going to be 3 years old in January 2011. Yeay..cant wait and cant believe as she has grown up such beautifully. We know that so far we have been such a good parent to our lovely daughter :) right darling?

Anyway, as usual I have to crack my head to find her a birthday cake. Last year I ordered a 3D Baby Minnie Mouse Cake from Event DirecTus. The cake is a chocolate flavor, designed very decoratively with a baby Minnie Mouse on top and all colors put on the cake looked really vibrant. The taste..hmmm not up to my satisfaction.

So, this time I think I'm going to get her another Minnie Mouse Cake. She is really loves Minnie Mouse despite there were so many other characters that she loves to watch in TV but her soul is really with Minnie..a big fan of Minnie Mouse :). I was thinking probably this time I can bake for her..but still thinking that coz I'm not really good in art..hmmmm how to decorate a nice Minnie Mouse cake..??

To order a cartoon character's cake cost you a fortune!! The last cake I ordered was about RM400. Yeah, I know it was such an expensive cake for a 2 years old girl..I'm not that stingy to spend that amount of money for my daughter, it just that this time I was thinking that the value that I spent before was not worth with the taste of the cake despite the cake looks really beautiful.  Still thinking and thinking....hhhmmm

I've googled Minnie's photo and found below image might be perfect to be drawn on her cake..

I probably can bake a round or rectangle chocolate cake with fresh strawberry (she likes strawberry!) and chocolate cream filling. Sounds yummy but not to sure whether it will turn nice :)..I could just give a try this weekend and probably the art work will leave to my dearly hubby...yeah, that would be a good idea since my hubby can draw not like me :D

Battle in Weight Management

Some women having difficulties in maintaining their body, especially after getting married or deliver a baby..In my case I would say after getting married. My body suddenly is getting slightly chubby (hahaha still don't want to acknowledge) until hard to control the weight.

I've been trying few slimming products to loss my weight but keep my exercising activities  at a very minimal. Well, that is really not a good way to loss your weight. Even though if we were to take any slimming products, we should to exercise regularly besides taking healthy foods.

My first slimming product was a Herbalife.  I had this product for about 1 month plus only. The result was so fantastic. In a week I had lost about 3 kgs and everyone is seemed noticed that I was getting slimmer even my Boss can't stop talking every time he see me. Very satisfied with the result and I decided to stop the products, thinking that I could manage my weight at that time.

However, my judgement towards my body was wrong. In less than a year, I lost in a battle to keep my body in a shape. It was getting worst and I even fatter than before :(. I've tried  to exercise, control my eating habit but it just won't work. From that moment, I knew that I had to do something. I've tried few other slimming products such as Detox Tea & Kinohimitsu and it just wont work like Herbalife. At that time I decided not to take Herbalife again because I believed that the reason I can't control my diet because of this product. Silly me :)!

There were so many advertisement on this new slimming product i.e. Jus Mate 5 in year 2008/09. I've told my hubby that I wanted to give a try to this product. Perhaps this might give me a fantastic result like Herbalife. I took this product for about a month plus and yes the result was unexpected. I lost my weight again and I can put on all my clothes that I cant put on before. So, again I decided to stop this product and tried to manage my own diet.

Unfortunately I was wrong again. Controlling food without regular exercise is useless. We tend to eat food that we like the most. Being a Malay you cant void to eat rice, 'sambal', 'masak lemak cili padi', curry and so many other unhealthy and oily food. Well, thats what make we love and proud of Malaysia the most :D. This time I'm not only fighting with my weight but  I've to battle with my health condition. Improper and unhealthy diet scheme have made me suffering with High Blood Pressure and High Cholesterol LDL. I don't think that I'm that fat but there were BMI chart that proof that you just need to be within the BMI range to keep you healthy which I have to conquer now.

Well, I'm back on diet regime and this time I know that I have to do very hard. I'm trying to maintain it very tightly. I just need to find my time to conduct regular exercise. I need to lower my cholesterol level within 6 months before I meet the doctor again and perhaps by this time I will not have any sort of decease.

Red Velvet Cake

I'm a food lover and love to bake..Few months back I found this recipe from Joy of Baking.com. I've tried few times and the result was so fantastic. Eventhough the color is bright but it is so nice to eat with the cream cheese frosting.

Come on and have a look at this recipe and try yourself. You will definitely satisfy with the result and the taste.

Red Velvet Cake:
2 1/2 cups (250 grams) sifted cake flour
1/2 teaspoon salt
2 tablespoons (15 grams) regular or Dutch-processed cocoa powder
1/2 cup (113 grams) unsalted butter, at room temperature
1 1/2 cups (300 grams) granulated white sugar
2 large eggs
1 teaspoon pure vanilla extract
1 cup (240 ml) buttermilk
2 tablespoons liquid red food coloring
1 teaspoon white distilled vinegar
1 teaspoon baking soda

Cream Cheese Frosting:
1 - 8 ounce (227 grams) cream cheese, room temperature
1 - 8 ounce (227 grams) tub of Mascarpone cheese, room temperature
1 teaspoon pure vanilla extract
1 cup (115 grams) confectioners' (icing or powdered) sugar, sifted
1 1/2 (360 ml) cups heavy whipping cream

Red Velvet Cake:
Preheat oven to 350 degrees F (175 degrees C) and place rack in center of oven. Butter two - 9 inch (23 cm) round cake pans and line the bottoms of the pans with parchment paper. Set aside.
In a mixing bowl sift together the flour, salt, and cocoa powder. Set aside.
In bowl of your electric mixer, or with a hand mixer, beat the butter until soft (about 1-2 minutes). Add the sugar and beat until light and fluffy (about 2-3 minutes). Add the eggs, one at a time, beating well after each addition. Scrape down the sides of the bowl. Add the vanilla extract and beat until combined.
In a measuring cup whisk the buttermilk with the red food coloring. With the mixer on low speed, alternately add the flour mixture and buttermilk to the butter mixture, in three additions, beginning and ending with the flour.
In a small cup combine the vinegar and baking soda. Allow the mixture to fizz and then quickly fold into the cake batter.
Working quickly, divide the batter evenly between the two prepared pans and smooth the tops with an offset spatula or the back of a spoon. Bake in the preheated oven for approximately 25 - 30 minutes, or until a toothpick inserted in the center of the cakes comes out clean. Cool the cakes in their pans on a wire rack for 10 minutes. Place a wire rack on top of the cake pan and invert, lifting off the pan. Once the cakes have completely cooled, wrap in plastic and place the cake layers in the refrigerator for at least an hour (or overnight). (This is done to make filling and frosting the cakes easier.)

Cream Cheese Frosting:
In the bowl of your electric mixer, or with a hand mixer, beat the cream cheese and mascarpone cheese until smooth. Add the vanilla and confectioners sugar and beat until smooth. Using the whisk attachment, gradually add the heavy cream and whip until the frosting is thick enough to spread. Add more sugar or cream as needed to get the right consistency.
Assemble: With a serrated knife, cut each cake layer in half, horizontally. You will now have four cake layers. Place one of the cake layers, top of the cake facing down, onto your serving platter. Spread the cake layer with a layer of frosting.  Place another layer of cake on top of the frosting and continue to frost and stack the cake layers. Frost the top and sides of the cake. Can garnish the cake with sweetened or unsweetened coconut.
Serves 10 - 12 people.

LDL and HDL Cholesterol

Just want to share below article from American Heart Association so that everyone is aware and can take care of our life.

LDL and HDL Cholesterol: What's Bad and What's Good?

LDL bad HDL good
Cholesterol can’t dissolve in the blood. It has to be transported to and from the cells by carriers called lipoproteins. Low-density lipoprotein, or LDL, is known as “bad” cholesterol. High-density lipoprotein, or HDL, is known as “good” cholesterol. These two types of lipids, along with triglycerides and Lp(a) cholesterol, make up your total cholesterol count, which can be determined through a blood test.

LDL (Bad) Cholesterol
When too much LDL (bad) cholesterol circulates in the blood, it can slowly build up in the inner walls of the arteries that feed the heart and brain. Together with other substances, it can form plaque, a thick, hard deposit that can narrow the arteries and make them less flexible. This condition is known as atherosclerosis. If a clot forms and blocks a narrowed artery, heart attack or stroke can result.

HDL (good) Cholesterol
About one-fourth to one-third of blood cholesterol is carried by high-density lipoprotein (HDL). HDL cholesterol is known as “good” cholesterol, because high levels of HDL seem to protect against heart attack. Low levels of HDL (less than 40 mg/dL) also increase the risk of heart disease. Medical experts think that HDL tends to carry cholesterol away from the arteries and back to the liver, where it's passed from the body. Some experts believe that HDL removes excess cholesterol from arterial plaque, slowing its buildup.

Triglycerides
Triglyceride is a form of fat made in the body. Elevated triglycerides can be due to overweight/obesity, physical inactivity, cigarette smoking, excess alcohol consumption and a diet very high in carbohydrates (60 percent of total calories or more). People with high triglycerides often have a high total cholesterol level, including a high LDL (bad) level and a low HDL (good) level. Many people with heart disease and/or diabetes also have high triglyceride levels.

Lp(a) Cholesterol
Lp(a) is a genetic variation of LDL (bad) cholesterol. A high level of Lp(a) is a significant risk factor for the premature development of fatty deposits in arteries. Lp(a) isn’t fully understood, but it may interact with substances found in artery walls and contribute to the buildup of fatty deposits.
